Tomatoes, right?! At this point in the summer, if you have a garden, you’re getting a ton of red gems. And, if you don’t, you’re seeing them and drooling in the grocery store.

Wipe the drool.

Now. What do tomatoes have to do with waffles? Well, Joy over at Joy the Baker presents this recipe for a savory waffle to use as the bread on a BLT (kosher bacon, please!). I’ll admit to making up a batch when I had buttermilk on hand and popping them all in the freezer until my tomatoes started to come in. Now it’s easy to pull one out, heat it briefly in the toaster oven or waffle iron, and cover it in garden-fresh tomatoes and crispy kosher bacon and crunchy lettuce. And…maybe some more cheddar cheese. Maybe.
