crispy sweet potato roast

Another thing I did over the past three months was host a Passover Seder. That is, Joshua and I did it together (of course). I made the food, he led the seder. My sister Christine sent over this sweet potato recipe, which she also brought to the seder she attended. It might become a Passover “thing”.

One of the things that really makes it great is how eye-catchingly beautiful it is. A dark, cast iron pan filled with a glistening spiral of thinly-sliced orange potatoes? Come on.

I probably could have taken mine out of the oven a hair sooner, but oh well. Next time. And there will be a next time.
