Lemon Chicken

It really can be this simple. Lemon. And chicken. And maybe some onion.

And it’s a HUGE HIT! Joshua said it was delicious – win! If I had made the full 13×9″ pan, there would be freezer leftovers for an entire new meal. I love that.

I used bone-in chicken thighs, but next time, I’d like to try boneless. Mine took longer in the oven because of the bone, but that wasn’t a big deal. Very juicy!!
