I’ve missed pizza a little, being gluten-free, and the restaurant options are good fixes, but kind of expensive. Chickpea flour is super cheap, if you buy it at the right place, and this thing is made in a skillet. Couldn’t be easier. Let’s do this.
I like Molly’s toppings, but I did butternut squash, caramelized onion, and feta. Maybe a little garlic. The point it, you can do anything you want with the basic skillet cake recipe. Top it like you would a pizza, right?
