There’s something about the number 1 that makes things look really easy. This recipe uses 1 bay leaf, 1 teaspoon salt, 1 tablespoon olive oil, 1 pound mushrooms, 1 onion, 1 carrot, 1 celery stalk, 1 garlic clove…there are so many ones in this recipe, your mind tells you it’s a cinch.
And it pretty much is – amazing, right!?
I love the use of lentils and steel-cut oats. Oatmeal in my shepherd’s pie?? You know it.
This would be even easier if you happened to have a few leftover sweet potatoes that were already cooked. Even so, it’s simple to pop them in the oven while you do other things.
